Ingredients
- 2.5 cups Bisquick baking mix
- 4 tablespoons cold butter (for dough)
- 1 cup grated medium Cheddar cheese (heaping)
- 3/4 cup cold whole milk
- 1/4 teaspoon garlic powder (for dough)
- 2 tablespoons butter, melted (for topping)
- 1/2 teaspoon garlic powder (for topping)
- 1/4 teaspoon dried parsley flakes (for topping)
- 1 pinch salt (for topping)
Method
-
1Preheat the oven to 400Β° Fahrenheit.
-
2Combine the Bisquick with cold butter in a medium bowl using a pastry cutter or dinner fork, mixing until small pea-sized chunks of butter remain throughout.
-
3Add the Cheddar cheese, milk, and garlic powder to the mixture and combine by hand with a large spoon until just combined, being careful not to overmix.
-
4Drop quarter-cup portions of the dough onto an ungreased cookie sheet using an ice cream scoop.
-
5Bake for 15 to 17 minutes or until the tops of the biscuits turn light brown.
-
6While the biscuits bake, melt the butter in a small microwave-safe bowl and stir in the garlic powder and dried parsley flakes.
-
7Upon removal from the oven, brush the garlic butter mixture over the tops of all biscuits, ensuring all butter is used.
Notes
The key to fluffy, flaky biscuits is using cold butter and not overmixing the dough. Small chunks of butter in the dough contribute to the light, airy texture. Do not over-mix the dough after adding wet ingredients. One quarter-cup ice cream scoop makes portioning the dough easier and ensures uniform biscuit size.
