Panda Express Mandarin Chicken

Ingredients
- ΒΎ cup sugar
- ΒΌ cup soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon vegetable oil
- 1 teaspoon minced fresh garlic
- Β½ teaspoon minced fresh ginger
- ΒΌ cup water
- 4 teaspoons arrowroot
- 6 pieces skinless chicken thigh fillets
Method

1Combine sugar, soy sauce, lemon juice, oil, garlic, and ginger in a small saucepan.

2Combine water with arrowroot in a small bowl and stir until arrowroot is dissolved. Add to saucepan and turn heat to high.

3Stir often while bringing mixture to a boil, then reduce heat and simmer for 4 to 6 minutes until sauce is thick.

4Preheat grill on high for the chicken.

5When grill is hot, rub each chicken piece with oil and cook for 4 to 6 minutes per side until completely cooked with browned spots.

6When chicken is done, chop it into bite-size pieces.

7Pour chicken pieces into a large frying pan over medium heat. Heat until chicken sizzles, then reduce heat and cover until ready to serve.

8Spoon chicken into a medium bowl, pour all sauce over chicken, and stir until well coated.

9Serve with steamed white rice.
Notes
Serve with steamed white rice on the side. The sauce is the key component of this dish.
