Alfredo-style Sauce, Light

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp flour
  • garlic
  • onion
  • grated Parmesan cheese
  • 1.5+ cups whole milk
  • optional: splash of lemon juice

Method

    In medium, heavy-bottomed pot, melt butter with garlic & onion.

    Stir in flour & pepper. Cook 2 minutes.
  3. 3
    Add milk all at once. Cook and stir constantly over Medium heat until bubbly & thickened. Be careful not to scorch the bottom.

    Cook 1 minute.

    Add cheese. Stir to melt.

    If sauce is too thick, add milk at any time.

    Serve over pasta.

Variations

White Bean Alfredo-Style Sauce
Add:
1-2 handfuls cooked white beans
(May need more butter for flavor)

Optional:
Use an immersion blender to hide the beans, but add an extra 1/4 ~ 1/2 cup milk.
If the sauce is too "bean-y," add 1-2 Tbsp lemon juice.
Secret Ingredient: Egg Yolk
(Before adding cheese)
Spoon a bit of sauce into a small bowl.
Mix in 1 egg yolk, then mix back into the pan.
Cook 3-5 minutes.
